And then they get that build up and then either something doesn't happen or something goes wrong. Yes you're setting yourself up for a major disappointment right and I think this year. We definitely did not set ourselves. That and that's why it was just an enjoyable now -- That's greatness in New Year's -- is another one of those -- exact everybody anticipates that an end if they go down and -- who should be for any tiny little reason. And what I would first let's talk about your background -- -- us a little bit about week and how you got started in this. Is innocent. Why well what you do in the day it's still a long story I'll keep it short but I'd start cooking young when I was nine at home and come my first job in the business when I was about eighteen. Open suit in 92. I think it was one of my favorite restaurants there may it rest in peace thank you and and then my current business partner mark Paul and I. Open to wink in 2001. And I know that week his one and lots of accolades. And that reviews on his restaurant are just great this isn't just me. Now I'm liking it I mean and -- honestly say they'd just very good back again yet again on the list of the cardinal and one of the top restaurants in town that's right it's a place you don't want to miss and why did you tell us for a quick -- about what we have -- president we can make sure they get money for this -- project -- is out. The -- I'm glad to know how to -- yeah. So let me ask how much is that he's an idea that's true it's true. -- it's a little bit more than just pain or not you got to actually eat them didn't pay them off without so what are we have in front of the seller is this what are we it's beautiful here. Are doing a three course or tonight and I. First course is AM it's a very light simple dish it's so much she she she me it's slightly glazed with a little sugar and vinegar. Served with mustard trail which is aimed Muster agreement very light and delicate and from -- creek farms here in Austin. And a Blackberry on the slider to -- -- system each wheel itself. Greg yeah I mean what is your guys go ahead and -- there aren't going to be it's amazing we can't have silence on the radios no silence that Osama and oh yeah. You're going to do and I'll talk is -- talk about the wind you know pairing with this BS and this is it -- times riesling. And I'm a huge reason hand and it. Always on the barricades for because I think you know so many Americans are first and only experience was reasoning has been -- nine right is that experience yeah I could I remember that actually yeah. I don't every remember tonight I go yeah I was there but it was yeah well long story coming up. And and they -- and their idea of riesling is you know something is released its sickly sweet you know very thick and not -- pleasant. When in fact most reasons are many -- she can buy -- from Germany and Austria com are very dry now. The free it is there but there -- There's a wonderful dryness and acidity at the end of the wine that tied a very nicely in the mouse he don't get that cloying. Sort of this. We'll answer the cops sir Paul field -- -- I think a lot of people. Equate -- with just a -- -- they don't understand and they do you make them the -- -- -- -- out that this is -- -- -- dry wine and I have to say -- lakers knocked this one out the part that is so it was very good when they do our pairings and de -- they're dangerous -- spot aren't I I can go there is a caterer and I'm not Somalia and far from Brian I don't call myself an expert by any shape and stretch of the imagination. I can walk in there with the minions and this is what I'm having what would Jesus Jack shirt and they can do it in you guys did the same thing and we intentionally do it every night I mean we offer a fun course JC many of the seven course tasting menu vegetarian TC many of we pair wines with every course of this -- his clothes off our regular menu which we changed every day and it's by the last two writes I don't have a my whole bottle and you taste different state and their small -- are 23 ounces per -- so you got me out a little had been overdue he has said that's -- and that's great especially -- at -- -- seven course tasting menu. If you drink a full forums or six -- -- you couldn't drive home now I said this is that's the proper way to do -- night. Is reading I was going there and kind of Reading you're the menus and things and that's what I want to ask you about where your course tasting the five and seventeen. So when your doing something like that. First volume I'm sure you have to make reservations to be able to have CoreStates and -- is that something no you know we are men and caddies do whatever you want offered both -- offered every night. Right and is it something where. I also saw where your menu is different every day even. So far your courses the five and seven courses also different each day or is that something where it's a little more and then they change every day. Well -- and we're not we we move things around. Our pro teams rules say relatively constant on the season particularly when certain -- running around but our starters are avenger sauces they change every day. And we move them around. And we have a great crew it's it's it's a weird dynamic at wing because of -- night. First came up with how I wanted to design the restaurant right. I was. Much younger then and I was a cook and I wanted to design something from the kitchen out instead of from dean the front door in that that's a great because people like to see. The cooking and all the activity and things like -- right and in Canada and good but to be honest I was being probably a little more selfish I just I want I realized how was I did I want it play. Happy and and selfish act because people love it and it's a wonderful concept and -- so what we have basically our. A group of -- commend every single day now they see what's in the law order basically they see what's in the fridge. And they put it together and we have. Clearly for different people writing our menu from the kitchen every single day -- it always reads like one person wrote it and I've never been able to figure out how. I'm wonder if it's just I can't explain it. Well that must have worked together long enough for the each other to kind of know what you're eating you have to you have so many different people in the kitchen now I mean different ages different experiences different skill sets. And yet it always looks like. When activated together yeah the next half and it worked for us for twelve years so I don't know here's something else that I think is really really interesting about wink is that they are. They try to use as many local purveyors as possible and Brian is kind of and it's Berry farm to market right I mean you know it's very fresh it's very fresh I think I like the ship's mystery basket every -- this is what -- -- what are you get dramatic investments and -- from far away yeah. Yeah that's all precious to must wonder -- greens and that's the start of that of a perfect dinner and it's -- has been unconventional and it's been this way because. You know for many years as you know too loosely been in the business. You know. And and then menu that doesn't change -- -- it -- restaurant owners have always wanted they wanted right consistency that he's -- that an asset -- they think their customers to prefer something it's always going to be there right there in some your favorite dishes as your favorite restaurants are always going to be there and this is are you relying on right. What we've done on the other we've kind of turn that on its head and what we sell this quality in Boca and so when we have people that come into our place two or three times a week. Knowing that they're not gonna have the same dish but knowing that the quality is going to be yourself for them. It's an experiment it's fun and when they -- -- as opposed to coming in and and looking for you know. Can I have that same chicken bridal can -- beef can I have that same exact her well and so people can and looking good they're gonna have they have a different experience with the gonna have the same express bus -- there's an excitement to that kind of menu right for the well it's more experience -- opposed to just saying yeah I'm just -- number three. That's what you gotta to better play center or not gratifying to see how many people are willing to experiment on a weekly basis on a daily basis. Because as you know most people are fairly conservative with their money when they got -- -- say they want it to be and yeah they're not coloring outside the lines too much. And we found at an audience here in Austin thank goodness that com. Really do like coloring outside the lines hot and very light alliance at all without no lines here guys still around it's with what we do and it also works because it. You can continue to have people come back and every time it's different. Well it's a surprise I mean every top prize for everybody says that -- makes it really how well that's this. -- something about wink that and and the fact that you know it's going to be an ad rates. Experience and it's not going to be the same thing you have the last time -- it's going to be east something special something to remember. You're gonna learn something may get a taste of something different he may not have ever thought of before. And that's the Bryant's at having a restaurant like weeks that you can you go to. Yeah -- -- it's a pressurized suit and make sure that qualities there every single time and every single -- gain -- -- is does your resting. Well the great thing is is that later on in the show we're going to be talking more about -- in about the different menus in what also what we're gonna have in front of us. A wind from Spain insider saying gosh. Horse racing in Spain are not shut down a very easy going wine. Really personal pairs with things off the grill compare over the burger compare with the sausage compare with -- -- for a extremely personal it's a red one that people really need to get to know a little bit more of Spain is making great wine right now in the country. And happy and has actually has been for quite some time trying to and it's very affordable very inexpensive car and you're getting great quality both on the white and the red side -- particularly on the red side and cut and I love. Regard not sure and because it's. It'll work in the winner with heavier dishes out but it's particularly great in the summer with a slight chill. If you're taking if you're taking even a grilled chicken off the grill. See that's great for people here you can have a red wine winkle world -- yes and you always think that they want to pair they they hit they got an old school philosophy that's why I mean like fish or chicken. Cassidy why I want it not true that I can't I can't even figure out who invented that -- how did I don't know why though but the French are now yeah came up with -- -- -- to Cilic. Because -- some people out they don't like they've room temperature wind they just don't like well sure and a lot of red wines actually don't show well. At room temperature -- temperatures typically in the seventies them. But if you go to basically are the least bit -- sellers in your -- sellers it's lower -- sixty optimum temperature is 56 degrees so that's a slightly chilled wind that's for red and -- that's true who's ever thought about you know that you should not throw the fridge for a few minutes and -- down especially in the summertime next time we go to Salt -- Take -- all that -- as well. -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- And I think the only thing it's hurt them is that is a branding issue right you know it's -- Germans can buy a -- they probably sell more wine now. Yeah look at the label is nothing consonants and they -- value of their somewhere that is so it's hard to pronounce and people won't buy things he can't count -- -- -- that they don't. We forgot to mind a line drive and here I have this fabulous menu and they don't have anything apparently decade runnin' utes window -- these guys again. -- -- and Jimmy -- on their prices are great but the good thing is also you can go to wing in -- have a great wine bar and you can go in trying out some different winds there all out and you know what else -- guys is -- will top he wide this one works with a this current wages and interest any of it's a hard concept for a lot of people learn right. And how to pair and I'm not get at it and so I would prefer to departed an expert like star. Well and -- I'm not so much of next perhaps is around during a lot of wind yet. No word and doesn't Wear hats and -- -- a bad thing about knowing about wine is the more you drink the more you know it's a wonderful thing. But it. With our one analyst at -- him give. One of the reason people get so intimidated about pairing wine and beer or wine and food and a what are the reasons they do is they think semi solid likely listening liquid like wine right -- think of -- like a suit OK it's not it's not a beverage it is a food it has a lifespan has the right inning in the middle and -- and it just die eventually it's our living thing inside the bottle prior focus a beverage okay we're. -- and I yeah get your battery terminals like I mean I had. It's our club Coca-Cola but you know I can't as one can as one can and it doesn't matter. Why is very different it's a living breathing thing think that is a liquid foods so. It becomes easier to pair at that point if -- -- -- you -- glass of food in the plate answering what what flavors. -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- -- It is is the fact is that there -- flavors. Flavor profiles inside the wind can actually enhance. Undefeated on the plate and vice Versa. So think about you're trying to -- now not just like a beverage we're beverage in the glass and then somebody on the plate trial. Peer to -- people are much easier turning to food such -- governor Joseph assure. You know people can figure that out there you know talk to -- about her hero figure out you know -- -- think of think this is a failure in the glass becomes much easier than it opens things up. -- to -- gestures during describes the Reese's. Well his last week -- they were -- -- -- -- well let me let me -- just and a little disclaimer here before -- get started and get into the Internet rules. OK I am reading the questions as -- think he's got I appreciate you haven't seen the show -- today. And attention you questions album a lunatic is different from other local firms. You know first won't clarify you know their -- -- electric is a state certified in the two contractor. The thing about it is that. We're in a unique niche in the electoral industry where you know we we specializing. In lighting right and in lighting controls we do a lot of -- I don't works right -- you and that's when things that we've been able to master within the electrical industry. Like other firms is that. Were able to take the regular nominal voltage from the article one point 940. And 35670. I was a couple of others -- units currently. These guys are I assign a scare me I don't know we were keeping it simple -- The thing about it is. We're able to consolidate. Our experience with the global it industry Brandon a lot of the lighting controls are pretty low voltage right here and so you have the different contractors that sometimes are they're able to do just regular electrical thing you have. A customer that has to hire another person to do -- low voltage. Portion of providing control. And that's one of the things that we're a very unique about that we're also certified to be doing the low voltage side -- so we understand the concepts of I uniting the the line insider of the higher voltage with a low voltage and and -- Tina product for the news is that you know -- satisfied for their needs -- -- Both the the smaller homes in the larger home -- and also India commercial industry. -- I'll do a lot of -- I mean I know that and Austin there's a big big trend these days in real estate for people to -- comes in and want to fix the map exactly there is there any I -- guys. With the goalie and then we'll have more up and retrofitting old house they've built in 1933. Dad has -- old school not into the guys coming in and take care all of that upgraded. And and put in the hot lights and whatever people want for today standards correct. Yes that is correct basically -- able -- -- to come in into our new retro -- -- one of things that would like to do is is make sure that you know. We take into consideration all the different. Requirements that are potential customers have. And make sure that we provide a good solutions form and in the ritual industry there's just so many different things that we can do now based. From from the lighting aspect -- you can do you know rhesus candle -- you can do under cabinet gliding above can -- When I was -- with LED staff now face twelfth LED -- it's a huge thing and I think. What is important I think it's Pittsburgh especially the listeners. -- -- -- if you can kind of take us through a little bit of a step by step as far as what to -- what is the process of the customer calls you. Whether there doing new construction or their remodeling what would be your process what is but the limit tech way of getting. From the beginning of the creation. To the end of the destination murdered their move and end. Kind of what is your process and how would do how do you get information to people how do you you know what is that process. You know first of all we do have several avenues that we have. -- potential customers. Dad didn't touch with -- us. So that we can provide the solution that they're looking for. And you easily most customers either have a retrofit that there won in -- do press and they have the ideas of what you want all right yeah. And -- wanna go body and one of the things we also take into consideration is basically. A room by room approach -- Because he -- some of the rooms for example in the kitchen area. You wanna make sure that you provide good task lighting -- -- know. -- satisfied that whatever the needs may be for a customer. Where. One customer may have a higher priority in his hallways or in a they gallery and so we wanna make sure that we also provide the solution is gone really any humor though special writing that they want for their pains. So I'll -- you can actually sit down. -- is a set of plans and start out there are looking at what a customer's needs and wants star. And then look at what the product is that -- there and then taken meld those two together. And if you do something off the plans are if you go out just to walk the job to see what's possible or not possible. Is is there any charge that is -- -- -- that or is it do you have kind of a free. First time consultations. You know where you sit down and kind of find out what people are looking for. Well. Pursue -- mean we know the people who bring drawings and that's an excellent I mean. The bigger challenges are people who say hey come and see what I -- I want to do right and that's who we come in. You don't just like the drawings we still take the drawings we go we -- them. We ask them questions we try to figure out what they really want to. Way you know that's interesting because it's perfect for me as for -- for example I just made two new house three months ago. My house is completely re not -- Oprah I walked and it's got this fabulous kitchen. But the -- sliding ever the people every modeled this house obviously. We're actually going to use his kitchen right. And so I you know what having the dry -- is all well and -- But I think the fact that you guys come out to decide actually listen and to the customer and and hear what you -- -- what they're actual needs. Our I think is what makes you guys -- -- own car. Commodity for these guys you know when there's nothing worse than having the job done and then they -- can flip a switch and wow this is it working. Right you guys negate that by Marty fixing it before it becomes a problem and that's a real challenge sickest people are weird about lighting they don't know what they want it's very and they know they know good lighting right -- -- in a bad lighting when they see opens ferry did well for them to explain -- subjective. And Clinton made every time it's you could line up twenty people. And you would have twenty different perception -- once too bright ones not enough. Once just brighten -- because it can -- -- three bears well look like lots of different Bear Bryant and our restaurant we have fifty seats in 48 of them want the lights a different way right. And yeah we spent a lot of we've spent a lot of attention our lighting and try very it is crucial for restaurants and this is one of the things -- restaurants really overlook really camera is. How important lighting slightly cleaner dining room did you want everyone to look -- -- movie star but -- practical aspects to you have to be able to actually you know read the menu Krajicek. And right in -- and that's very important. You know dislike. Stewart said it is too important sometimes. He's gonna have dinner you -- have dinner where the -- real bright she's continuing to make sure that you know the accessibility or at the controls are there for do you lose. Being blue create the mood that you want to you know for him dinner -- -- -- Ted Valentine's you know. You have to you're on the ground and a library. If you do you have any idea you please go to him now I'm not ready for my clothes that I'm for birdie -- -- -- -- -- -- -- -- -- -- -- -- Well that's great you guys obviously can -- -- -- for your customers. Is reviewing an opposite you know we -- there is no charge to answer you know Scott's question we don't. We go out there and and how we make every effort to -- the business. And that's one of our philosophy is just to make sure that we commune with -- a good product that provides what -- We'll give you the results -- -- looking for that you know we wanna make sure we build a relationship with that in the future you wanna come back to us you know cragey. No I have a question because when you hear the word electrician. You also hear other words to go win that you know what are the different levels. Electrician I know there's a trend is. Journeyman master. And then there is licensed and unlicensed electrician that they can still say electrician so. What are what is all of that because I think a lot of people. Really don't. Understand yeah I wanna I I have no idea I know that you don't stick a fork in an outlet that's all -- -- I'm says Thomas -- a little bit about your well -- There's a couple of different levels but that you know it's comical how how opened up when things are clarify what that. You know -- electric is a licensed. Electricians electrical contractor with a state of Texas which means you'll have a number. On your all your trucks right. It will have guidelines that that we need to I don't think I'd like to -- guidelines that are established by the state of Texas and and along with those we have the different levels at the state recognizes and course the entry level -- switzer recognizes an apprentice. And then isn't -- -- this year you're learning and then you have a -- German someone that's been in the trade -- has passed an exam. -- -- she that -- have -- through -- you know where a woman take has apparently had to -- the traditions you know on staff. And how ever it takes a master the two contract has to have a mass tort reform can run and you have to be a licensed contractor to be able to. You know make a proposal or UN. Whether it be in writing or verbally -- based on state law that he can do much school. Gas -- using you guys you know you're gonna get somebody that knows what they're -- what they're doing it to carrard attack and that they're going to actually listen to even give you what you need for your final product. Try and that's great that's a great servers the guys from. And they also stand behind what their work is I mean some companies are fly by night -- right then they're gone but it limit tech is one of the companies that are here to -- But if anybody would doubt that it's it's got Bailey from money -- I don't know why I'm glad you said that because you know Lumet techies actually. A subsidiary of like unique. I didn't know that oh absolutely in the news you well know Laney has been around since ninety to 1950 our -- and I sumo line and now -- -- -- -- -- right now throughout the same pattern of slow. Of success you know that right that they work with so that's one of the things that helped us to be successful is it's -- that needs were acquitted and you know provide. Customer satisfaction of.
